Boutari 2011 Santorini

There is much to be said for the wonders of assyrtiko grown on the volcanic soils of Santorini. (Just ask W. Blake Gray.) Wines made from that grape variety have roundness and crispness, all at once, and this example from the 2011 vintage is no exception. There is a fruitiness and an almost fatty texture to it, but what really comes through is the fresh lime and serious minerality that keep increasing in intensity as the wine lingers in the mouth. Refreshing as can be for warm summer days, yet intense enough to be delicious with grilled lamb chops with Mediterranean herbs, and structured enough to age a few years. Highly recommended. 90. RC
