2007 Guarachi Cabernet Sauvignon

The 2007 vintage Napa Valley Cabernet Sauvignon is the inaugural wine from Guarachi Family Vineyards. Great choice. The wine showcases what a great winemaker, Paul Hobbs, can do in one of Napa’s best years. The color is opaque, nearly black. The eighteen months it spent in new French oak show on the nose, with vanilla and spice showing through a blend of black Nd fed fruits. On the palate, the initial flavors are all black fruits, deep mulberry over tart blackberry, with vanilla and spice backing them up. Red fruits show on the mid-palate, black cherry, with vanilla and spice becoming more partner than backup singer. Tannins are full and silky. This is a big wine in a big bottle, and it should share the table with a big steak, perhaps a cowboy ribeye. Highly Recommended. DH
